Beet & Lentil Veggie Burgers

These hearty veggie burgers are packed with lentils, walnuts, beets, and savory spices for a satisfying plant-based meal.

Ingredients

  • ½ cup raw walnuts
  • 2 tbsp extra virgin olive oil
  • ½ cup white onion, finely diced
  • 2 cups beets, peeled and shredded
  • 2 cloves garlic, minced
  • 2 tbsp tamari
  • 1 cup cooked lentils
  • 1 tbsp Dijon mustard
  • 1 tbsp sriracha
  • 1 tsp ground cumin
  • ½ tsp sea salt
  • ½ tsp ground black pepper
  • ½ cup Natura Fiber

Instructions

  1. Add all ingredients to a food processor and pulse until the mixture is well combined but still has some texture.
  2. Divide the mixture into 6 equal portions and shape into patties.
  3. Heat a lightly oiled grill pan or skillet over medium heat, or preheat an outdoor grill.
  4. Cook the patties for about 5 minutes per side, or until heated through and lightly browned.
  5. Serve immediately on a bun, in a lettuce wrap, or over a salad.

Storage: Store cooked patties in an airtight container in the refrigerator for up to 5 days, or freeze for up to 6 months.
