These hearty veggie burgers are packed with lentils, walnuts, beets, and savory spices for a satisfying plant-based meal.
Ingredients
- ½ cup raw walnuts
- 2 tbsp extra virgin olive oil
- ½ cup white onion, finely diced
- 2 cups beets, peeled and shredded
- 2 cloves garlic, minced
- 2 tbsp tamari
- 1 cup cooked lentils
- 1 tbsp Dijon mustard
- 1 tbsp sriracha
- 1 tsp ground cumin
- ½ tsp sea salt
- ½ tsp ground black pepper
- ½ cup Natura Fiber
Instructions
- Add all ingredients to a food processor and pulse until the mixture is well combined but still has some texture.
- Divide the mixture into 6 equal portions and shape into patties.
- Heat a lightly oiled grill pan or skillet over medium heat, or preheat an outdoor grill.
- Cook the patties for about 5 minutes per side, or until heated through and lightly browned.
- Serve immediately on a bun, in a lettuce wrap, or over a salad.
Storage: Store cooked patties in an airtight container in the refrigerator for up to 5 days, or freeze for up to 6 months.
