Herb-Crusted Baked Cod

A light, flavorful baked cod with a savory herb crust that's simple enough for weeknights and elegant enough for entertaining.

Ingredients

  • 4 cod fillets (about 6 oz each), thawed if frozen
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • ½ tsp sea salt
  • ½ tsp ground black pepper
  • ½ cup Natura Fiber
  • ¼ cup fresh chives, chopped
  • ¼ cup fresh parsley, chopped
  • 1 tbsp lemon zest

Instructions

  1. Preheat the oven to 350°F. Line a baking sheet with parchment paper.
  2. Pat the cod fillets dry with paper towels and place them on the prepared baking sheet.
  3. In a small bowl, combine the garlic powder, onion powder, oregano, salt, pepper, Natura Fiber, chives, parsley, and lemon zest.
  4. Press the herb mixture evenly onto the tops of the cod fillets.
  5. Bake for 20–25 minutes, or until the fish is opaque and flakes easily with a fork. (Cooking time may vary depending on the thickness of the fillets.)
  6. Serve immediately with roasted vegetables, cauliflower rice, or a fresh green salad.
