A light, flavorful baked cod with a savory herb crust that's simple enough for weeknights and elegant enough for entertaining.
Ingredients
- 4 cod fillets (about 6 oz each), thawed if frozen
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried oregano
- ½ tsp sea salt
- ½ tsp ground black pepper
- ½ cup Natura Fiber
- ¼ cup fresh chives, chopped
- ¼ cup fresh parsley, chopped
- 1 tbsp lemon zest
Instructions
- Preheat the oven to 350°F. Line a baking sheet with parchment paper.
- Pat the cod fillets dry with paper towels and place them on the prepared baking sheet.
- In a small bowl, combine the garlic powder, onion powder, oregano, salt, pepper, Natura Fiber, chives, parsley, and lemon zest.
- Press the herb mixture evenly onto the tops of the cod fillets.
- Bake for 20–25 minutes, or until the fish is opaque and flakes easily with a fork. (Cooking time may vary depending on the thickness of the fillets.)
- Serve immediately with roasted vegetables, cauliflower rice, or a fresh green salad.
