A smooth, comforting soup with naturally sweet carrots, fresh ginger, turmeric, and a hint of lemon. Perfect for a light lunch or cozy dinner.
Ingredients
- 1 yellow onion, diced
- 6 cloves garlic, minced
- 4 cups carrots, peeled and chopped
- 2 tbsp fresh ginger, grated
- 1 tbsp ground turmeric (or 1 tbsp freshly grated turmeric)
- 1 tbsp fresh lemon juice
- 4 cups vegetable broth
- Sea salt and freshly ground black pepper, to taste
- ¼ cup Natura Fiber
Instructions
- In a large pot, add a splash of the vegetable broth over medium heat.
- Add the onion and garlic and sauté for about 5 minutes, until softened and fragrant.
- Add the carrots, ginger, turmeric, lemon juice, remaining vegetable broth, salt, and pepper.
- Bring the soup to a boil over high heat, then reduce the heat to low and simmer for 15–20 minutes, or until the carrots are tender.
- Carefully transfer the soup to a blender (working in batches if necessary), or use an immersion blender, and blend until smooth and creamy.
- Remove from the heat and stir in the Natura Fiber until fully incorporated.
- Let the soup stand for 5 minutes to thicken slightly.
- Garnish with freshly grated ginger, if desired, and serve warm.
Storage: Refrigerate leftovers in an airtight container for up to 1 week, or freeze for up to 6 months.
