Carrot Ginger Soup

A smooth, comforting soup with naturally sweet carrots, fresh ginger, turmeric, and a hint of lemon. Perfect for a light lunch or cozy dinner.

Ingredients

  • 1 yellow onion, diced
  • 6 cloves garlic, minced
  • 4 cups carrots, peeled and chopped
  • 2 tbsp fresh ginger, grated
  • 1 tbsp ground turmeric (or 1 tbsp freshly grated turmeric)
  • 1 tbsp fresh lemon juice
  • 4 cups vegetable broth
  • Sea salt and freshly ground black pepper, to taste
  • ¼ cup Natura Fiber

Instructions

  1. In a large pot, add a splash of the vegetable broth over medium heat.
  2. Add the onion and garlic and sauté for about 5 minutes, until softened and fragrant.
  3. Add the carrots, ginger, turmeric, lemon juice, remaining vegetable broth, salt, and pepper.
  4. Bring the soup to a boil over high heat, then reduce the heat to low and simmer for 15–20 minutes, or until the carrots are tender.
  5. Carefully transfer the soup to a blender (working in batches if necessary), or use an immersion blender, and blend until smooth and creamy.
  6. Remove from the heat and stir in the Natura Fiber until fully incorporated.
  7. Let the soup stand for 5 minutes to thicken slightly.
  8. Garnish with freshly grated ginger, if desired, and serve warm.

Storage: Refrigerate leftovers in an airtight container for up to 1 week, or freeze for up to 6 months.
