These soft, wholesome cookies are naturally sweetened with ripe bananas and packed with oats, cocoa, chia seeds, and chocolate. They're perfect for a nutritious snack or healthy dessert.
Ingredients
- 3 ripe bananas
- 2 cups gluten-free rolled oats
- ½ cup Natura Fiber
- ¼ cup almond butter
- ¼ cup unsweetened cocoa powder
- ⅓ cup unsweetened applesauce
- ½ cup dark chocolate chips (*dairy free to make vegan)
- ¼ cup chia seeds
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 350°F. Line a baking sheet with parchment paper or lightly grease it.
- In a large bowl, mash the bananas until mostly smooth.
- Stir in the rolled oats, Natura Fiber, almond butter, cocoa powder, applesauce, chocolate chips, chia seeds, and vanilla extract until well combined.
- Let the batter rest for 10 minutes to allow the oats and chia seeds to absorb moisture and thicken the mixture.
- Scoop tablespoon-sized portions onto the prepared baking sheet and gently flatten each cookie with a fork.
- Bake for 12 minutes, or until the cookies are set.
