Chocolate Banana Oat Cookies

These soft, wholesome cookies are naturally sweetened with ripe bananas and packed with oats, cocoa, chia seeds, and chocolate. They're perfect for a nutritious snack or healthy dessert.

Ingredients

  • 3 ripe bananas
  • 2 cups gluten-free rolled oats
  • ½ cup Natura Fiber
  • ¼ cup almond butter
  • ¼ cup unsweetened cocoa powder
  • ⅓ cup unsweetened applesauce
  • ½ cup dark chocolate chips (*dairy free to make vegan)
  • ¼ cup chia seeds
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F. Line a baking sheet with parchment paper or lightly grease it.
  2. In a large bowl, mash the bananas until mostly smooth.
  3. Stir in the rolled oats, Natura Fiber, almond butter, cocoa powder, applesauce, chocolate chips, chia seeds, and vanilla extract until well combined.
  4. Let the batter rest for 10 minutes to allow the oats and chia seeds to absorb moisture and thicken the mixture.
  5. Scoop tablespoon-sized portions onto the prepared baking sheet and gently flatten each cookie with a fork.
  6. Bake for 12 minutes, or until the cookies are set.
  7. Allow the cookies to cool completely before serving.
