Whole Grain Vegan Waffles

These hearty waffles are crisp on the outside, tender on the inside, and perfect for a wholesome breakfast. Top them with fresh fruit, nut butter, or a drizzle of maple syrup.

Ingredients

  • 1½ cups oat flour
  • ½ cup Natura Fiber
  • 2 tsp baking powder
  • Dash of ground cinnamon
  • 1 cup unsweetened non-dairy milk (oat, coconut, or almond milk)
  • ¼ cup coconut oil, melted
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract

Instructions

  1. Preheat your waffle iron according to the manufacturer's instructions.
  2. If starting with rolled oats, blend them in a high-speed blender until they form a fine oat flour.
  3. In a large bowl, whisk together the oat flour, Natura Fiber, baking powder, and cinnamon.
  4. In a separate bowl, whisk together the melted coconut oil, non-dairy milk, maple syrup, and vanilla extract.
  5. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  6. Lightly grease the waffle iron with coconut oil.
  7. Pour ¼ to ½ cup of batter into the waffle iron, depending on its size, and cook according to the manufacturer's directions until golden brown.
  8. Serve warm with your favorite toppings, such as fresh berries, sliced bananas, nut butter, or a drizzle of maple syrup.
