Seafood Curry
Organic Ingredients:
- 2 tablespoons extra virgin olive oil
- 500 g fish fillets (cod or halibut)
- 250 g peeled shrimp
- 1 white onion, diced
- 4 cloves garlic, minced
- 1 red pepper, sliced
- 500 ml full fat coconut milk
- 1 cup tomatoes, diced
- 1 cup green beans
- 1 cup vegetable broth
- sea salt to taste
- freshly ground pepper to taste
- 1 tablespoon cumin powder
- 1 tablespoon ground red paprika
- 3 tablespoons madras curry powder
- 1 teaspoon cayenne pepper
- 2 tablespoons Natura Fiber
- 1/4 cup fresh cilantro
- 1 tablespoon crushed chili
- 1 lime, juiced
Method:
- Wash and cut fish into small bite sized pieces.
- Season fish and shrimp with freshly ground pepper and sea salt.
- Heat extra virgin olive oil in a large skillet over high heat.
- Add fish and shrimp and cook through until it’s a little golden brown on the edges.
- When cooked, remove fish and shrimp from the skillet and set aside on a plate.
- Reduce the heat to medium high and add onion, garlic, red pepper and cook for 2 minutes.
- Next add coconut milk, diced tomatoes, green beans, vegetable broth and stir well.
- Add spices, salt, pepper stir well and bring it to simmer.
- Cook for 15 minutes.
- After 15 minutes return fish and shrimp to skillet and cook for 3 minutes.
- Remove from heat and stir in Natura Fiber.
- Garnish with fresh cilantro, crushed chilli and lime juice
