Banana Oat Pancakes

These naturally sweet pancakes are hearty, wholesome, and perfect for breakfast. Top with toasted coconut, sliced bananas, walnuts, or fresh fruit for an extra nutritious finish.

Ingredients

  • 2 cups oat flour
  • 2 cups filtered water
  • ½ cup Natura Fiber
  • 1–2 ripe bananas, mashed
  • 2 eggs
  • ½ tsp vanilla extract

Optional Toppings

  • Toasted coconut
  • Sliced banana
  • Chopped walnuts
  • Diced peaches or strawberries

Instructions

  1. If starting with rolled oats, blend them in a blender or food processor until they reach a fine flour consistency.
  2. In a large bowl, mash the bananas. Whisk in the eggs and vanilla extract until well combined.
  3. Stir in the oat flour and Natura Fiber.
  4. Gradually add the water, stirring until a smooth batter forms. Let the batter rest for a few minutes—it will continue to thicken as it sits.
  5. Heat a lightly greased skillet or griddle over medium heat. Coconut oil works well for cooking.
  6. Scoop the batter onto the skillet, spreading it gently with the back of a spoon if needed.
  7. Cook for 3–4 minutes per side, or until golden brown and cooked through.
  8. If the batter becomes too thick while standing, stir in a little additional water until it reaches your desired consistency.
  9. Serve warm with your favorite toppings.
