Ingredients
- 1 cup natural creamy peanut butter (or your favorite nut or seed butter)
- ½ cup pure maple syrup or honey (maple syrup for vegan)
- 1 tsp vanilla extract
- ½ tsp sea salt
- ½ cup Natura Fiber
- 2½ cups crispy brown rice cereal (gluten-free)
- ½ cup chocolate chips of choice (gluten-free, vegan)
Instructions
- Line an 8 x 8-inch baking pan with parchment paper.
- In a medium saucepan over low heat, combine the peanut butter, maple syrup (or honey), and vanilla extract. Stir until smooth and well combined.
- Remove from the heat and stir in the Natura Fiber until fully incorporated.
- Add the crispy brown rice cereal and gently stir until evenly coated.
- Transfer the mixture to the prepared pan and press it firmly into an even layer using a spatula or the back of a spoon.
- Place the chocolate chips in a microwave-safe bowl and microwave in 20-second intervals, stirring between each, until completely melted. Alternatively, melt the chocolate in a small saucepan over very low heat.
- Pour the melted chocolate over the bars, tilting the pan as needed to spread it evenly.
- Refrigerate for 30 minutes, or until firm.
- Cut into 16 bars and serve.
