Chocolate Peanut Butter Crispy Bars

These no-bake bars are chewy, crunchy, and topped with a layer of rich chocolate. They're perfect for meal prep, lunchboxes, or a wholesome afternoon treat. *Vegan-adaptable.

Ingredients

  • 1 cup natural creamy peanut butter (or your favorite nut or seed butter)
  • ½ cup pure maple syrup or honey (maple syrup for vegan)
  • 1 tsp vanilla extract
  • ½ tsp sea salt
  • ½ cup Natura Fiber
  • 2½ cups crispy brown rice cereal (gluten-free)
  • ½ cup chocolate chips of choice (gluten-free, vegan)

Instructions

  1. Line an 8 x 8-inch baking pan with parchment paper.
  2. In a medium saucepan over low heat, combine the peanut butter, maple syrup (or honey), and vanilla extract. Stir until smooth and well combined.
  3. Remove from the heat and stir in the Natura Fiber until fully incorporated.
  4. Add the crispy brown rice cereal and gently stir until evenly coated.
  5. Transfer the mixture to the prepared pan and press it firmly into an even layer using a spatula or the back of a spoon.
  6. Place the chocolate chips in a microwave-safe bowl and microwave in 20-second intervals, stirring between each, until completely melted. Alternatively, melt the chocolate in a small saucepan over very low heat.
  7. Pour the melted chocolate over the bars, tilting the pan as needed to spread it evenly.
  8. Refrigerate for 30 minutes, or until firm.
  9. Cut into 16 bars and serve.
