Juice Pulp Crackers

Don't let your fresh juice pulp go to waste! These simple baked crackers are a delicious, fiber-rich snack that's perfect topped with hummus, avocado, or your favorite spread. Recipe adapted from Lorena Santacruz. *Keto-friendly when using lower-carb vegetables, such as cucumber, celery, and ginger. 

Suggested Juice Combinations

  • Celery, carrots, and beets
  • Cucumber, celery, and ginger

Ingredients

  • Fresh juice pulp
  • Natura Fiber (about ¼ cup at a time, as needed)
  • Himalayan salt
  • Seeds of choice (optional)

Instructions

  1. Preheat the oven to 300°F. Line a baking sheet with parchment paper.
  2. Place the fresh juice pulp in a mixing bowl.
  3. Stir in Natura Fiber, adding ¼ cup at a time, until the mixture thickens enough to hold together.
  4. Spread the mixture evenly onto the prepared baking sheet, pressing it into a layer about ¼ inch thick.
  5. Sprinkle lightly with Himalayan salt and seeds of choice.
  6. Bake for 40 minutes, or until firm and beginning to crisp.
  7. Allow to cool slightly, then cut into squares or crackers.
  8. Serve on their own or topped with hummus, avocado, or your favorite spread.
