Preheat the oven to 350°F. Line two baking sheets with parchment paper.
In a small bowl, combine 1 tablespoon Natura Fiber with the water to create a flax egg. Stir well and let it sit for about 10 minutes to thicken.
In a medium bowl, whisk together the whole wheat pastry flour, spelt flour, ½ cup Natura Fiber, cinnamon, cloves, ginger, nutmeg, baking soda, and salt.
In a large bowl, combine the melted coconut oil and molasses. Using an electric mixer, beat on high speed for 2–3 minutes until smooth.
Add the coconut sugar and prepared flax egg, then mix on low speed until combined.
Add half of the dry ingredients to the wet ingredients and mix until incorporated. Add the remaining dry ingredients and mix just until no dry flour remains.
Scoop the dough onto the prepared baking sheets, leaving about 2 inches between cookies. Gently flatten each cookie slightly with your hand or the back of a spoon.
Bake for 10–12 minutes, or until the edges are set and the tops are slightly cracked.
Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
