Beet Pancakes

Ingredients

  • ¾ cup gluten-free steel-cut oats
  • ¼ cup Natura Fiber
  • 2 free-range eggs
  • 1 small beet, cooked and chopped
  • 2 tsp ground cinnamon
  • 2 tbsp pure maple syrup
  • 2 tsp baking powder
  • 2 tsp coconut oil

Instructions

  1. Add the oats, Natura Fiber, eggs, beet, cinnamon, maple syrup, and baking powder to a blender. Blend until the batter is smooth.
  2. Heat a lightly greased griddle or nonstick skillet over medium heat. Add the coconut oil to coat the surface.
  3. Pour the batter onto the hot griddle to form pancakes.
  4. Cook until bubbles begin to form on the surface and the edges start to look set, about 2–3 minutes.
  5. Flip and cook for another 2–3 minutes, or until golden brown and cooked through.
  6. Let the pancakes cool slightly before serving.
  7. Serve warm with fresh berries and a drizzle of pure maple syrup, if desired.
