Ingredients
- ¾ cup gluten-free steel-cut oats
- ¼ cup Natura Fiber
- 2 free-range eggs
- 1 small beet, cooked and chopped
- 2 tsp ground cinnamon
- 2 tbsp pure maple syrup
- 2 tsp baking powder
- 2 tsp coconut oil
Instructions
- Add the oats, Natura Fiber, eggs, beet, cinnamon, maple syrup, and baking powder to a blender. Blend until the batter is smooth.
- Heat a lightly greased griddle or nonstick skillet over medium heat. Add the coconut oil to coat the surface.
- Pour the batter onto the hot griddle to form pancakes.
- Cook until bubbles begin to form on the surface and the edges start to look set, about 2–3 minutes.
- Flip and cook for another 2–3 minutes, or until golden brown and cooked through.
- Let the pancakes cool slightly before serving.
- Serve warm with fresh berries and a drizzle of pure maple syrup, if desired.
