Herbed Egg Salad

A classic egg salad elevated with fresh herbs, capers, and Dijon mustard. Perfect served on gluten-free bread, lettuce wraps, or as a protein-packed snack.

Ingredients

  • ½ cup mayonnaise
  • 2 tbsp Dijon mustard
  • 1 tbsp capers
  • 1 tbsp freshly squeezed lemon juice
  • 2 cloves garlic, minced
  • Freshly ground black pepper, to taste
  • 8 hard-boiled eggs, peeled and diced
  • 1 tsp celery salt
  • 2 tbsp fresh dill, chopped
  • 2 tbsp fresh chives, chopped
  • ⅓ cup Natura Fiber

Instructions

  1. In a large mixing bowl, combine the mayonnaise, Dijon mustard, capers, lemon juice, garlic, and black pepper.
  2. Add the diced hard-boiled eggs, celery salt, dill, chives, and Natura Fiber.
  3. Gently stir until all ingredients are evenly combined.
  4. Refrigerate for at least 10 minutes before serving to allow the flavors to blend.
  5. Serve on gluten-free bread with butter lettuce, in lettuce wraps, or enjoy on its own.
