A classic egg salad elevated with fresh herbs, capers, and Dijon mustard. Perfect served on gluten-free bread, lettuce wraps, or as a protein-packed snack.
Ingredients
- ½ cup mayonnaise
- 2 tbsp Dijon mustard
- 1 tbsp capers
- 1 tbsp freshly squeezed lemon juice
- 2 cloves garlic, minced
- Freshly ground black pepper, to taste
- 8 hard-boiled eggs, peeled and diced
- 1 tsp celery salt
- 2 tbsp fresh dill, chopped
- 2 tbsp fresh chives, chopped
- ⅓ cup Natura Fiber
Instructions
- In a large mixing bowl, combine the mayonnaise, Dijon mustard, capers, lemon juice, garlic, and black pepper.
- Add the diced hard-boiled eggs, celery salt, dill, chives, and Natura Fiber.
- Gently stir until all ingredients are evenly combined.
- Refrigerate for at least 10 minutes before serving to allow the flavors to blend.
- Serve on gluten-free bread with butter lettuce, in lettuce wraps, or enjoy on its own.
