Ingredients
- ½ cup creamy almond butter
- 1 cup unsweetened applesauce
- ½ cup maple syrup or liquid sweetener of choice
- 1 tsp pure vanilla extract
- 1 cup gluten-free rolled oats
- 1 cup Natura Fiber
- 1 tbsp ground cinnamon
- ½ tsp sea salt
- 1 tsp baking soda
- ½ cup chopped walnuts
Instructions
- Preheat the oven to 350°F. Line a baking sheet with parchment paper.
- In a large mixing bowl, combine the almond butter, applesauce, maple syrup, and vanilla extract.
- Add the oats, Natura Fiber, cinnamon, salt, and baking soda. Stir until well combined.
- Fold in the chopped walnuts.
- Using your hands or a cookie scoop, form the mixture into 16 evenly sized balls and place them on the prepared baking sheet.
- Gently press each cookie down with the back of a spoon to flatten slightly.
- Bake for 15 minutes, or until the cookies are lightly golden.
- Remove from the oven and allow to cool completely before serving.
Storage: Store in an airtight container for up to 7 days, or freeze for up to 6 months.
