Oatmeal Apple Cookies

Soft, wholesome cookies made with almond butter, applesauce, oats, walnuts, and warming cinnamon. A naturally sweet treat that's perfect for snacks or breakfast on the go. *Vegan when made with a vegan liquid sweetener (such as maple syrup) instead of honey.

Ingredients

  • ½ cup creamy almond butter
  • 1 cup unsweetened applesauce
  • ½ cup maple syrup or liquid sweetener of choice
  • 1 tsp pure vanilla extract
  • 1 cup gluten-free rolled oats
  • 1 cup Natura Fiber
  • 1 tbsp ground cinnamon
  • ½ tsp sea salt
  • 1 tsp baking soda
  • ½ cup chopped walnuts

Instructions

  1. Preheat the oven to 350°F. Line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the almond butter, applesauce, maple syrup, and vanilla extract.
  3. Add the oats, Natura Fiber, cinnamon, salt, and baking soda. Stir until well combined.
  4. Fold in the chopped walnuts.
  5. Using your hands or a cookie scoop, form the mixture into 16 evenly sized balls and place them on the prepared baking sheet.
  6. Gently press each cookie down with the back of a spoon to flatten slightly.
  7. Bake for 15 minutes, or until the cookies are lightly golden.
  8. Remove from the oven and allow to cool completely before serving.

Storage: Store in an airtight container for up to 7 days, or freeze for up to 6 months.
