A creamy, spiced pumpkin blend layered over chia pudding for a nutritious breakfast or dessert.
Ingredients
Chia Layer
- ⅓ cup chia seeds
- 1 cup unsweetened almond milk
Pumpkin Blend
- 1 (340 ml) can pumpkin purée
- 2 tbsp maple syrup
- ½ tsp ground cardamom
- 1 tbsp Natura Fiber (blended in)
- 1 tbsp Natura Fiber (for topping)
Optional toppings
- Pumpkin seeds
- Cinnamon
- Chopped pecans
Instructions
- In a jar or bowl, mix the chia seeds and almond milk. Stir well and refrigerate overnight until thickened.
- Refrigerate the pumpkin purée overnight as well for best texture and flavor.
- The next day, add the pumpkin purée, maple syrup, cardamom, and 1 tbsp Natura Fiber to a blender. Blend until smooth.
- Spoon chia pudding into serving glasses or bowls.
- Pour or layer the pumpkin mixture on top.
- Finish with the remaining 1 tbsp Natura Fiber and any additional toppings such as pumpkin seeds, cinnamon, or pecans.
- Serve immediately.
