Pumpkin Chia Pudding Smoothie

A creamy, spiced pumpkin blend layered over chia pudding for a nutritious breakfast or dessert.

Ingredients

Chia Layer

  • ⅓ cup chia seeds
  • 1 cup unsweetened almond milk

Pumpkin Blend

  • 1 (340 ml) can pumpkin purée
  • 2 tbsp maple syrup
  • ½ tsp ground cardamom
  • 1 tbsp Natura Fiber (blended in)
  • 1 tbsp Natura Fiber (for topping)

Optional toppings

  • Pumpkin seeds
  • Cinnamon
  • Chopped pecans

Instructions

  1. In a jar or bowl, mix the chia seeds and almond milk. Stir well and refrigerate overnight until thickened.
  2. Refrigerate the pumpkin purée overnight as well for best texture and flavor.
  3. The next day, add the pumpkin purée, maple syrup, cardamom, and 1 tbsp Natura Fiber to a blender. Blend until smooth.
  4. Spoon chia pudding into serving glasses or bowls.
  5. Pour or layer the pumpkin mixture on top.
  6. Finish with the remaining 1 tbsp Natura Fiber and any additional toppings such as pumpkin seeds, cinnamon, or pecans.
  7. Serve immediately.
