Vegan Italian Pasta Salad

Ingredients

  • ½ cup bowtie or corkscrew whole wheat pasta (dry)
  • 1 small head broccoli, chopped
  • 1 red onion, diced
  • 1 red or yellow bell pepper, diced
  • 2 medium tomatoes, diced
  • 1 zucchini, chopped
  • 2 tbsp fresh basil, chopped
  • ¾ cup fat-free vegan Italian salad dressing
  • 2 tsp Natura Fiber
  • Salt and black pepper, to taste

Instructions

  1. Bring a pot of salted water to a boil. Cook the pasta until al dente, then drain and rinse under cool water. Set aside.
  2. Steam the broccoli for 2–3 minutes until just tender but still bright green.
  3. In a large bowl, combine the cooked pasta, broccoli, onion, bell pepper, tomatoes, zucchini, and basil.
  4. Add the Italian dressing and Natura Fiber, then toss everything together until well coated.
  5. Season with salt and black pepper to taste.
  6. Refrigerate for at least 1 hour to allow the flavors to marinate before serving.
