Vegan Italian Pasta Salad
Ingredients
- ½ cup bowtie or corkscrew whole wheat pasta (dry)
- 1 small head broccoli, chopped
- 1 red onion, diced
- 1 red or yellow bell pepper, diced
- 2 medium tomatoes, diced
- 1 zucchini, chopped
- 2 tbsp fresh basil, chopped
- ¾ cup fat-free vegan Italian salad dressing
- 2 tsp Natura Fiber
- Salt and black pepper, to taste
Instructions
- Bring a pot of salted water to a boil. Cook the pasta until al dente, then drain and rinse under cool water. Set aside.
- Steam the broccoli for 2–3 minutes until just tender but still bright green.
- In a large bowl, combine the cooked pasta, broccoli, onion, bell pepper, tomatoes, zucchini, and basil.
- Add the Italian dressing and Natura Fiber, then toss everything together until well coated.
- Season with salt and black pepper to taste.
- Refrigerate for at least 1 hour to allow the flavors to marinate before serving.
