White Chocolate Macadamia Nut Cookies
Organic Ingredients:
- ½ cup shredded coconut
- ½ cup Natura Fiber
- 1 teaspoon baking soda
- ¼ teaspoon sea salt
- 1 ½ cups cashew butter or butter of choice
- ½ cup erythritol or granulated sweetener of choice
- 1 teaspoon vanilla extract
- ½ cup chopped macadamia nuts
- ½ cup sugar free white chocolate chips
Method:
- Preheat the oven to 325F and line a large baking sheet with parchment paper.
- In a medium bowl, whisk together the shredded coconut, Natura Fiber baking soda, and sea salt.
- In a large bowl mix together the cashew butter, erythritol and vanilla extract.
- Add the dry mixture into the wet and mix until thoroughly combined.
- Fold in the macadamia nuts and white chocolate chips.
- Roll the dough into 1 inch balls and place several inches apart on the prepared baking sheets as they will spread.
- Gently press down to about ½ inch thickness with the back of a large spoon.
- Bake 15 minutes, until golden brown around the edges.
- Remove and let cool completely on the pan.
- Store it in a sealed container for up to 1 week or in the in the freezer for up to 6 months.
