White Chocolate Macadamia Nut Cookies

 

Organic Ingredients:

 

  • ½ cup shredded coconut
  • ½ cup Natura Fiber
  • 1 teaspoon baking soda
  • ¼ teaspoon sea salt
  • 1 ½ cups cashew butter or butter of choice
  • ½ cup erythritol or granulated sweetener of choice 
  • 1 teaspoon vanilla extract
  • ½ cup chopped macadamia nuts
  • ½ cup sugar free white chocolate chips

 

Method:

 

  • Preheat the oven to 325F and line a large baking sheet with parchment paper. 
  • In a medium bowl, whisk together the shredded coconut, Natura Fiber baking soda, and sea salt. 
  • In a large bowl mix together the cashew butter, erythritol and vanilla extract.
  • Add the dry mixture into the wet and mix until thoroughly combined.
  • Fold in the macadamia nuts and white chocolate chips.
  • Roll the dough into 1 inch balls and place several inches apart on the prepared baking sheets as they will spread.
  • Gently press down to about ½ inch thickness with the back of a large spoon. 
  • Bake 15 minutes, until golden brown around the edges.
  • Remove and let cool completely on the pan.
  • Store it in a sealed container for up to 1 week or in the in the freezer for up to 6 months.
